2 Cps. DRIED WHEATBERRIES**
2 Quarts Cold Water
2 Tbl. Finely Chopped Green Onions
4 Tbl. Chopped Fresh Mint
1 ½ Cps DRIED TART CHERRIES**
Salt & Freshly Ground Black Pepper
4 Tbl. GRAPESEED OIL**
Zest of 1 Lemon
4 Tbl. Fresh Lemon Juice
1 Tbl. Chopped Fresh Mint
Salt & Pepper to taste
Cover the wheatberries w/cold water & soak overnight. Drain & rinse well. Place in a heavy pot w/water to cover & boil until full blown & crisp tender. About 15-20 mins. Drain well & rinse the berries to cool down. You should have 5-6 cps. Combine the wheatberries with the green onions, cherries, mint & seasonings in a large bowl. Toss w/salt & pepper. Mix the ingredients for dressing in a small bowl. Whisk well. Add to the wheatberries. Place the salad in refrigerator to chill. The salad will hold for many days, tasting better after the rest.
